There are many different versions of the K2 LED's. The figure's shown are for the ones offered here.
The lumens shown in red are the brightest in that color. This should not be the only basis for which led to use, there are other things to consider such as price and voltage required.
It is better to use a higher wattage rated resistor than required, but never use a resistor at less than 25% of its rated power.
The resistors listed above are the recommended or better wattage rated resistor for each specific voltage/LED combination.
